		<description>This is great and very true!  One quick thing to add is to take an extra look to the combination of foods and spices you see in various ethnic (and American) vegetarian dishes.  

When going &quot;Veg&quot;- whether every day or once a week, you want to make it count and maximize your intake of the the valuable vitamins, minerals and plant based proteins in your meals.

What you cook and how (and the length) you cook it can drastically improve the nutritional benefit on top of the taste.</description>
